Krocin i krocetin su odgovorni za intenzivnu \u017eutu boju, a ujedno su i klju\u010dni igra\u010di u njegovim antioksidativnim i neuroprotektivnim efektima. Safranal, eteri\u010dno ulje, daje \u0161afranu prepoznatljivu, blago gorku aromu i djeluje direktno na nervni sistem. Pikrokrocin je prekursor safranala i tako\u0111er doprinosi gorkoj noti i farmakolo\u0161koj aktivnosti.   <\/p>\n<p class=\"font-claude-response-body break-words whitespace-normal
